Garlic Butter Steak Bites and Potatoes Recipe
Ingredients
For the Potatoes:
- 1.5 lbs (700g) baby potatoes, halved or quartered (depending on size)
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
For the Steak Bites:
- 1.5 lbs (700g) sirloin steak or ribeye, cut into 1-inch cubes
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 3 tablespoons unsalted butter
- 4–5 garlic cloves, minced
- 1 teaspoon fresh thyme or rosemary (optional)
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Prepare the Potatoes:
- Heat a large skillet over medium heat and add 2 tablespoons olive oil.
- Toss the halved potatoes in a bowl with paprika, garlic powder, onion powder, salt, and pepper.
- Place the potatoes cut side down in the skillet and cook for about 12–15 minutes, flipping occasionally, until golden and fork-tender. Remove and set aside.
- Cook the Steak Bites:
- Pat the steak cubes dry with paper towels and season generously with salt and pepper.
- Heat 1 tablespoon olive oil in the same skillet over high heat.
- Add the steak cubes in a single layer (do this in batches if necessary to avoid overcrowding). Sear each side for 2–3 minutes until golden brown. Remove and set aside.
- Make the Garlic Butter Sauce:
- In the same skillet, reduce the heat to medium and melt the butter.
- Add the minced garlic and cook for 1–2 minutes until fragrant.
- Stir in fresh thyme or rosemary, if using.
- Combine Everything:
- Return the steak bites and cooked potatoes to the skillet, tossing them in the garlic butter sauce to coat evenly.
- Cook for another 1–2 minutes to warm everything through.
- Garnish and Serve:
- Sprinkle chopped parsley over the dish for a fresh touch.
- Serve hot with a side salad, crusty bread, or steamed vegetables.
