Garlic Butter Steak Bites and Potatoes Recipe

Ingredients

For the Potatoes:

  • 1.5 lbs (700g) baby potatoes, halved or quartered (depending on size)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

For the Steak Bites:

  • 1.5 lbs (700g) sirloin steak or ribeye, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 3 tablespoons unsalted butter
  • 4–5 garlic cloves, minced
  • 1 teaspoon fresh thyme or rosemary (optional)
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Prepare the Potatoes:
    • Heat a large skillet over medium heat and add 2 tablespoons olive oil.
    • Toss the halved potatoes in a bowl with paprika, garlic powder, onion powder, salt, and pepper.
    • Place the potatoes cut side down in the skillet and cook for about 12–15 minutes, flipping occasionally, until golden and fork-tender. Remove and set aside.
  2. Cook the Steak Bites:
    • Pat the steak cubes dry with paper towels and season generously with salt and pepper.
    • Heat 1 tablespoon olive oil in the same skillet over high heat.
    • Add the steak cubes in a single layer (do this in batches if necessary to avoid overcrowding). Sear each side for 2–3 minutes until golden brown. Remove and set aside.
  3. Make the Garlic Butter Sauce:
    • In the same skillet, reduce the heat to medium and melt the butter.
    • Add the minced garlic and cook for 1–2 minutes until fragrant.
    • Stir in fresh thyme or rosemary, if using.
  4. Combine Everything:
    • Return the steak bites and cooked potatoes to the skillet, tossing them in the garlic butter sauce to coat evenly.
    • Cook for another 1–2 minutes to warm everything through.
  5. Garnish and Serve:
    • Sprinkle chopped parsley over the dish for a fresh touch.
    • Serve hot with a side salad, crusty bread, or steamed vegetables.
